The festival of Govardhan Puja is celebrated on the next day of Diwali i.e. on the Pratipada of Shukla Paksha of Kartik month. Govardhan Puja is also called Annakoot. This day has great significance in Hinduism. The festival of Govardhan depicts the Leela of Shri Krishna.
In such a situation, on this day people make Govardhan mountain from cow dung in their homes and worship it. Here in North India, especially in Mathura Vrindavan, this day is associated with the child leelas of Shri Krishna, while in the state of Gujarat in western India, it is considered the day of the beginning of the Gujarati New Year.

Vegetables for making Annakoot
One carrot, one radish, two tandas, 100 grams of sage, small pumpkin, 4-5 tomatoes, some green fenugreek, two potatoes, two to three brinjals, one cauliflower, 100 grams of beans, one arbi, 6-7 ladyfinger, 2-3 parwal, one capsicum, half gourd, one raw banana, 100 grams of green coriander, one ginger, 2-3 green chilies
Spices
Oil, asafoetida, cumin seeds, turmeric powder, dry mango powder, garam masala, salt, coriander powder, red chili powder
Method
Making Annakoot vegetables is quite easy. To prepare it, first wash all the vegetables thoroughly and chop them finely. Cut the leafy vegetables as well and keep them aside. So that all the vegetables get cooked well separately. After keeping the vegetables aside, cut the green chilies and tomatoes and keep them aside.
After cutting all the vegetables, now heat the oil in a pan and add asafoetida and cumin seeds to it. After roasting the cumin seeds, add turmeric powder, and coriander powder and fry lightly. Then add green chilies and ginger and fry the spices.
When the spices are fried, add all the chopped vegetables to it and then add salt as well as red chili powder to it. After adding the vegetables, add some water to them so that they get cooked. When the vegetables start getting cooked, add garam masala and dry mango powder to it. When the vegetable is ready, add chopped coriander leaves on top of it.
